One pot meal restaurant style chicken vegetable biryani

Hi friends,
                Welcome again.. Today I am going to share with you all the recipe of the king of all Indian dishes.. BIRYANI!! Almost every region of India has a special biryani recipe. There are different styles attached to all of them..awdhi biryani, hydrabadi biryani,kolkata biryani,mumbai style biryani toname a few.
Now biryani is not confined to India only..Some other middle eastern countries and countries fromIndian subcontinent have thier own style of biryani making. Here I didn't follow any specific style to make this biryani. Instead I tried to incorporate different styles and techniques of Biryani making to make this royal pot of meal.
Here I served this Biryani with some salads because this biryani hermonizes so many flavours and ingrediens that it can be very well enjoyed with some salads. But If you wish you can also serve this with some raita also. While cooking the chicken I didn't completely dry out the gravy which is why the Biryani is juicy and generally donot need any other side this.Sometimes less is more..:)


While making biryani one of the most crucial part is the rice. Basmati rice is brittle and can break easily. But if so the look and taste of the biryani is half spoiled. So it is said cooking the perfect rice for biryani is an art. And here i am quite happy with the end result..:)
I really wish I could send the fragrance of this royal biryani to your way it has musky, floral, sweet, soothing . rich aroma all infused with each other to create that luxurious aroma.Now before I start sounding a sales girl selling some exotic perfume I will stop describing its aroma. :P..Well you will have to cook this to believe me. Badami Gobhi or an easy to make nutty cauliflower recipe

Hi friends,
              Hope all of you are doing well.. Today I am back with another unique vegan recipe. This badami gobhi is a vegetarian version of the famous badami murgh or badami gosht,
Juicy cauliflower infused with aromatic spices and assorted nut mix is the usp of this dish. Look at those succulent melt in mouth gobhis peeking from the gravy. Don't they look yum?





Here is another closeup for you to enjoy.

Tip : Adding bundiya is optional but is generally added to badami gobhi to increase the crunch of it.
         You can also use cashew or almond but that will make this dish cremier but here I wanted to adhere   to more rustic taste so used coarse groundnut paste. Obviously it tasted different but different doesn't mean bad or not so good. It tastes superb and unique.
You can add fresh cream to this dish also but I didn't because I wanted to cut out the extra calourie.

Smokey tomato chatney recipe

Hi Friends,
A quick blog post to let you know that the video recipe of smokey tomato chatney which I served with Parwal shami kebab a few days back is now live on youtube. This chatney is an easy and delicious and better alternative of storebought tomato sauce. I said better alternative because we all know store bought tomato sauce contain lots of preservatives which are especially harmful for children.

This chatney has a smokey rustic flavour to it. Now most of us has made tomato chatney at least once in our lifetime but this smokey flavour is what makes this chatney unique. If you want to give your very own humble tomato chatney a delicious makeover then this recipe is what you need.



As you can see here I served this parwal shammi kebab with this smokey chatney but you can serve it with any kebab,cutlet,french fries,fritters,momo,sandwitch or anything you wish to.





Cooking time is 5 minutes if you have all the ingredients ready and you can keep this chatney in an airtight container in refrigerator for upto 2 days. For the recipeclick here..

Vegetarian shami kebab or Parwal Shami kebab recipe

Hi friends,
               I am back after a short break. Today I have another innovative recipe for all of you. This is a vegan and low calorie version of shami kebab which uses parwal as the core ingredient. These kebabs are delicious and yummy since I have not compromised with the flavour and aroma of the traditional recipe.

Badshahi chicken or royal chicken infused in selected Indian spices and condiment

Hi friends, Back again with the last recipe of my diwali marathon. Did you like these special recipes I posted in the last three days? Do comment..I would love to hear from you.
                                                                                                 So this last recipe of diwali marathon is very special. It is one of my signature dish. Infused with royal spices and condiments this is a royal treat for your tastebuds. Whenever I make this my family becomes so elated and always comment that this an out of the world dish. So here I thought of sharing this very special recipe of badshahi chicken on this very special festival of diwali. And also this is my first nonveg recipe here so it had to be something special. Whatsay?
Now this is a kind of dish we can't enjoy on a regular basis. yes it has some extra calories which we are allowed to have only once in a while. Diwali is one of them for sure or you can make it in bhai fota/bhai duj following this diwali.or any time when you want to feast like a real badshah (well, that should not be everyday :-P ). If you are dieting then i would like to suggest to skip this post or else don't blame me later. :-P

So here our diwali lunch is ready. I served this badshahi chicken with star anise flavoured jafrani pulao and some salad. And yes, that papaya flower pot is giving company to this royal platter.

Kasoori methi or dried fenugreek leaves flavoured poori recipe

The big day has finally come..HAPPY DIWALI TO ALL!!!!
In my blog diwali recipe marathon is continuing with yet another recipe of kasoori methi poori.

These pooris are very fluffy and softer because of the presence of baking soda and is tastier and more fragrant than regular pooris because of the presence of selected spices.
